This wholesome and fresh Buddha Bowl is packed to the brim full of nourishing ingredients. The perfect option for a warm summer’s evening. With delicious ingredients like Organic chickpeas, lentils, cucumber, avocado and kale, this delicious bowl is bound to have your tastebuds dancing. A must try this summer!

Ingredients
Bowl
- 400g Ceres Organics Chickpeas, rinsed and drained well
- 400g Ceres Organics Lentils, rinsed and drained well
- 1/2 cup chopped coriander
- 1/2 lemon, juiced
- 1/2 cup olive oil
- 1/2 cucumber, peeled into ribbons
- 1 avocado, halved, stone removed and sliced thinly
- 3 leaves of kale, washed well and stem removed
Tahini Dressing
- 1/2 cup Flannerys OWN Unhulled Tahini
- 1/2 lemon, juiced
- 2 tablespoons maple syrup
- 2 large cloves garlic, minced
To serve
- Fresh lemon
- Black pepper
Method
- In a large bowl, mix the chickpeas, lentils, coriander, lemon juice and olive oil. Set aside.
- In a medium bowl, whisk the tahini dressing ingredients together, adding a tablespoon of warm water at a time to help thin out the tahini.
- Assemble your bowl with all of the ingredients.
