Buckwheat is a fruit seed related to the rhubarb and sorrel family. It is gluten and wheat free making it a great gluten free alternative. Buckwheat is a good source magnesium, dietary fiber, copper and phosphorus. The high fiber content can improve digestion and lower cholesterol. Buckwheat can be used it sweet and savoury recipes
Ingredients:
2 cups buckwheat flour
1 large organic egg
3 ¾ cups of Almond milk (or milk of choice)
Salt and pepper to taste
Olive oil or Coconut Oil for frying
100g Smoked Salmon
2 tbsp chopped chives
½ Avocado
½ Lime
Method:
- Add Buckwheat flour, salt pepper and egg to a bowl and mix thoroughly
- Add the egg whilst continuing to mix the batter until a thick runny texture
- Add oil of choice to a fry pan and fry either side for 40 – 50 seconds
- Mash avocado and add salt, pepper and lime juice
- Top pancakes with smashed avocado, smoked salmon and chopped chives
