An ideal selection for lunch or dinner, bursting with flavour, antioxidants, and protein! Prepare the tabouli ahead of time and assemble your wraps whenever you’re ready to indulge! Wraps are definitely a favourite for us.

Makes 4 wraps
Ingredients:
- 1 pack of Ancient Harvest wraps
- 375g Deli Soy Smoked Tofu, cut into 1cm sticks
- 2 cups parsley, finely chopped
- 2 tomatoes, diced (seeds removed)
- 1 cucumber, 1cm cubes (seeds removed)
- ¼ cup mint, finely chopped
- 2 spring onions, finely sliced
- 2 cloves garlic, minced
- 1 lemon, zest and juice
- 200g Halfa hummus
- 3 tbsp Mingle Moroccan seasoning
- 2 tbsp extra virgin olive oil
- Salt & pepper, to taste
Method:
- Prepare parsley, tomato, cucumber, spring onion, mint, garlic and lemon zest and juice. Combine well in a large bowl and set aside in fridge.
- On a plate, combine extra virgin olive oil and Mingle seasoning. Slice tofu lengthways into approx. 1cm sticks. Place tofu in marinade and toss until well coated.
- Place a medium-large frying pan over medium heat. Place tofu in pan and cook until browned on each side. Set aside.
- Place a wrap down, add a generous serving of your homemade tabouli and top with tofu and a dollop of hummus. Season with salt and pepper and enjoy!
