Yes, dark chocolate is a pantry essential. It’s a great source of minerals including magnesium, iron, potassium, copper and manganese, all of which are essential to achieving optimal health.
Almond meal, which is basically ground whole almonds, is a great substitute for wheat flours because it is a good source of both fibre and protein.
Sugar is pretty minimal here, you only need a few tablespoons of your favourite liquid sweetener, like agave or fructose-free brown rice malt syrup. Perfect if you’re watching your sugar intake.
These gluten-free, vegan cookies are a great alternative to store brought baked goods full of processed ingredients and fillers. You can whip up a tray of these in less than a half hour, and the other bonus is, they only require one bowl and no food processor or blender, which means less cleaning!
INGREDIENTS
3 cups almond meal
6 tablespoons Organic Coconut Oil, High Heat Cooking
6 tablespoons Organic Brown Rice Malt Syrup
2 tablespoons filtered water
100g dark chocolate (roughly chopped)
METHOD
Preheat your oven to 150°C and line a baking tray with greaseproof paper.
Combine the almond meal, rice malt syrup, coconut oil and water in a large bowl.
Gently fold through the chopped dark chocolate and form 12 cookies and place on the prepared tray.
Bake for 30 minutes or until golden brown. Leave to cool off before eating!
