INGREDIENTS
- 2 cups rolled oats
- 1 cup sunflower seeds
- 1 cup pepitas
- 1 cup oat meal
- 1 cup roughly chopped nuts
- 1 Tbsp. cinnamon
- pinch of salt
- ½ cup coconut oil (melted)
- ½ cup maple syrup
- 1 tsp. vanilla extract
- 1 cup dried fruit
DIRECTIONS
1. Pre-heat over to 150oC and line an oven tray with baking paper.
2. In a large bowl combine oats, seeds, oat bran, nuts, cinnamon and salt. In a small bowl whisk together coconut oil, maple syrup and vanilla essence.
3. Pour wet ingredients into dry ingredients and combine really well.
4. Pour mixture onto tray and spread evenly. Bake in oven for 25-30 minutes. To ensure even baking, remove muesli from oven and shuffle around with a spatula 2-3 times throughout the cooking process. Remove from oven when muesli has just turned a light golden brown.
5. Allow muesli to cool completely, then pour dried fruit evenly over mixture and gently mix with a wooden spoon. Store muesli in an airtight container.
