Ingredients:
Apple Filling:
- 6 large Granny Smith apples, peeled and sliced
- 1 tbsp lemon juice
- 2 tbsp honey or maple syrup
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 tsp vanilla extract
- 2 tbsp coconut oil
Crumble Topping:
- 1 packet Paleo Hero Primal Muesli (200g)
- 1/2 cup almond meal
- 1/4 cup coconut oil, melted
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- Pinch of sea salt
Optional Serving Suggestions:
- Coconut yogurt
- Extra honey or maple syrup
- Fresh berries
Method:
- Preheat oven to 180°C (160°C fan-forced).
- Grease a 23cm (9-inch) baking dish with coconut oil.
- Peel & slice apples into even-sized pieces.
- Toss apple slices with lemon juice to prevent browning.
- In a large bowl, combine apples with honey, spices & vanilla.
- Heat coconut oil in a large pan over medium heat.
- Add apple mixture & cook for 5-7 minutes until slightly softened.
- Transfer to prepared baking dish.
- In a large bowl, combine Paleo Hero Primal Muesli & almond meal.
- Add melted coconut oil, honey, cinnamon & salt.
- Mix until well combined & crumbly.
- Spread crumble mixture evenly over the apple filling.
- Bake for 35-40 minutes until golden brown & apples are tender.
- Let stand for 10 minutes before serving.
