This superfood salad is packed with seasonal veggies, crisp apples, sweet cranberries, crunchy pistachio & creamy goat cheese & is the perfect dish to celebrate spring. This is a great nutrient-dense, fresh and super quick side salad! Additionally, add in a protein source and you’ve got a perfectly balanced and healthy meal!

Ingredients:
- 120g Coolibah Organic Superfood Mix
- 1 green apple, thinly sliced (mandoline)
- 1 red onion, thinly sliced
- 4 radish, thinly sliced
- 1 cup Kunara Tri Quinoa, cooked and cooled
- 100g Meredith Dairy Goat’s Cheese
- ¼ cup pistachios
- ¼ cup Flannerys Bulk Food Organic Cranberries
- 4 tbsp extra virgin olive oil
- 4 tbsp white wine vinegar
- 1-2 tsp maple syrup
- 1 tsp Dijon mustard
- Pinch of salt
Method:
- In a large salad bowl, combine salad leaves, onion, radish, cooked quinoa and goat’s cheese. You may like to add a little bit of the oil from the cheese to lightly dress the salad.
- Once well combined, add pistachios and cranberries.
- In a small bowl, combine extra virgin olive oil, vinegar, maple syrup, mustard and salt and whisk until well combined. This dressing is really vinegary—if you would like less, add a little bit more oil or maple syrup to your desired taste. Pour over salad and gently toss. Serve immediately.
