
This Sardine Margarita Bake is a quick, bold, and satisfying snack that brings together the briny richness of sardines, the tang of tomato and lemon, and the melty goodness of mozzarella – all baked to golden perfection. Inspired by Mediterranean flavors and made with pantry staples, this dish is perfect for sharing with crusty bread and a glass of something chilled. Whether you’re hosting friends or just craving something salty, spicy, and comforting, this easy bake delivers big flavor with minimal effort.

Ingredients:
- 1 tin of good-quality sardines in oil (keep the oil!)
- 2 tbsp tomato paste
- 1 clove garlic, finely chopped or grated
- 1 tsp lemon zest + a squeeze of juice
- 1 handful olives, sliced or torn
- 1 cup shredded mozzarella
- 1 tsp dried oregano or mixed Italian herbs
- Chilli oil, to taste
- Salt & pepper, to taste
- Crusty bread, to serve
- Extra herbs (like parsley or basil)
- Extra drizzle of chilli oil or lemon zest on top
Method
- Preheat oven to 180°C (350°F).
- In a small ovenproof dish or ramekin, mix the tomato paste, garlic, lemon zest, and a little of the sardine oil for richness. Season lightly with salt, pepper, and herbs.
- Gently break up the sardines and nestle them into the mix.
- Scatter the olives over the top.
- Sprinkle generously with mozzarella.
- Drizzle with chilli oil and a squeeze of lemon juice.
- Bake for 15–20 minutes, or until the cheese is golden and bubbling.
- Finish with fresh herbs or an extra drizzle of chilli oil if you like.
- Serve hot with crusty bread for dipping.
