So technically you’re not supposed to be seeing this until the official release of our next cookbook ‘FRESH’ but we just couldn’t help ourselves! This recipe was a favourite amongst our staff with a sweeter tooth and it’s also VEGAN! Introducing… the new way to do Rocky Rumble!

THE NEW ROCKY RUMBLE
25g dried cranberries
25g dried goji berries
75g macadamia nuts, roasted
1 cup popped corn
1 cup rice bubbles or puffed rice
50g cold coconut butter, cut into 1cm dice
30g freeze dried raspberries or strawberries
¼ teaspoon salt
200g dairy free dark chocolate, melted
1 teaspoon vanilla
Combine all of the above ingredients in a bowl and mix well. Transfer mixture to a 17cm x 17cm tray lined with baking paper. Refrigerate until set, then chop into pieces.
