Quick Cucumber and Sesame Salad

The quickest throw together salad ever! Cucumbers are low in calories but high in water and contain several important vitamins and minerals. Eating cucumbers with the peel provides the maximum amount of nutrients. This simple salad is the perfect accompaniment to any meal – light and delicious. Radishes add a peppery kick to this quick salad, and are a good source of vitamin C, folate and riboflavin (vitamin B2) They contain minerals such as potassium and calcium also.

Ingredients
  • 1 organic cucumber
  • 1 organic radish
  • 2 tbsp sesame seeds
  • 1 tsp sesame oil
  • 10 almonds chopped
  • Salt & pepper to taste

Method
  1. Slice cucumber finely long ways – it’s easiest to use a peeler to get super thin slices. Add to mixing bowl.
  2. Finely slice radish (a peeler is also handy here to get thin slices) and add to bowl.
  3. Add remaining ingredients and toss lightly.
  4. Serve as a delicious side to any meal
