Ingredients:
- 2 medium potatoes (e.g., Sebago or Russet), peeled & grated
- 1/2 cup Kehoe’s Kimchi, finely chopped + extra to serve
- 2 eggs
- 1 tbsp rice flour or plain flour (GF if needed)
- 1 tbsp tamari (or soy sauce)
- 1/2 tsp garlic powder
- 1 spring onion, finely sliced
- Salt & pepper to taste
- Olive oil spray (for waffle iron or pan)
To Serve:
- Gevity Great Guts Mayo
- Fresh herbs (coriander or chives)
- Extra kimchi
- To serve: fried egg &/or avocado on top
Method:
- Prepare the potato mix: Grate potatoes & squeeze out excess moisture using a clean tea towel. In a mixing bowl, combine potato, chopped kimchi, eggs, flour, tamari, garlic powder, spring onion, salt & pepper. Mix well.
- Cook the waffles: Preheat waffle iron & lightly oil. Spoon mixture in & cook for 4–6 minutes, until crispy & golden. (You can also cook as fritters in a non-stick pan if no waffle iron is available).
- Plate it up: Serve hot, drizzled generously with Gevity Great Guts Mayo. Top with more kimchi, herbs & optional extras like a fried egg or sliced avocado.
