THE EASIEST PASTA EVER! Kale and mushroom pasta is vegan and gluten free. Perfect if you are short for time or just don’t want to waste yours being in the kitchen! The combination of flavours is perfect for those who love the idea of pasta but it usually leaves them feeling over full & heavy! The fresh, organic ingredients of kale and mushroom, mixed with the rice pasta creates a light pasta meal still leaving you satisfied.
Ingredients:
- 10 organic mushrooms (roughly chopped)
- 1 cup organic kale (chopped finely)
- ½ cup organic rocket
- ¼ cup olive oil
- 1 tbsp garlic (minced)
- 1 tbsp chilli flakes
- ½ packet perfect earth rice pasta
- 1 lemon
- salt & pepper to taste
Method:
- Cook pasta as per packet instructions and set aside
- Heat oil in a large pan on high
- Add garlic and chilli flakes to pan to sauté
- Add mushrooms and kale and cook off for about 5 minutes
- Once mushrooms are looking cooked add pasta and rocket and toss for about 3-5 minutes to heat the pasta back up (add a pinch of salt and pepper here). If the pasta looks to dry just add a touch more olive oil.
- Once heated serve with salt and pepper and a lemon wedge (we suggest being generous with the lemon – tastes great )
