Gut Healing Miso Soup

Ingredients

4 cups Water, plus extra for miso paste

¼ cup (1 sheet) Dried Seaweed, cut into rectangles

4 tbsp Spiral Shiro Miso Paste

½ cup Spring Onions, finely sliced

½ cup Sturdy Greens, such as chard, chopped

¼ cup Tofu, cubed

 

Method

  1. Heat 4 cups of water in a medium saucepan and bring to a simmer.
  2. Add the seaweed and simmer for 5 minutes.
  3. In a small bowl, mix the miso paste with a small amount of hot water and whisk until smooth. Add to the saucepan and stir.
  4. Add the spring onions, greens and tofu to the saucepan and cook for 5-10 minutes until greens are the desired consistency.

    If you were short on time, could you heat some chicken stock and add some miso paste for some extra goodness? Not technically miso soup, but maybe a version of goodness in a mug??
