Treat yourself to this gluten-free spiced fruit & nut loaf, brimming with healthy fats for satiety, honey for sweetness & those beloved seasonal spices! Pair it with grass-fed organic butter for a delightful sweet & salty blend, or opt for coconut yogurt & banana for a nourishing breakfast or snack!

Ingredients:
- 2 cups Well & Good self-raising flour
- 1 free range organic egg
- ¼ cup coconut oil
- ½ cup honey
- 1 ½ cup almond milk
- 3 tsp white vinegar
- 2 cups Kunara’s bulk foods dried fruit (organic sultanas, figs, apricots)
- 1/3 Kunara’s bulk food nuts (almonds and walnuts)
- 3 tsp cinnamon, ground
- 3 tsp all spice, ground
- 1 tsp vanilla essence
- 1 orange, zest
Method:
- Preheat oven to 180°C fan forced. Line a 9 ½ inch loaf pan with baking paper.
- In a small bowl, combine almond milk and vinegar to make a homemade buttermilk. Set aside for 10 minutes.
- In a large bowl, combine flour and spices and whisk until blended. Then, add all wet ingredients plus orange zest. Whisk until smooth.
- Using a spatula, fold in dried fruit and nuts until well dispersed.
- Transfer mixture to loaf tin and flatten out the top. You may like to add any left-over fruit and nuts to the top here.
- Bake in oven for 45 minutes. When you put a skewer through the centre it should come out clean.
- Serve toasted with grass-fed organic butter.
