This yummy breaky loaf is perfect for a quick and easy breakfast or even a cheeky little snack! Packed with all the good stuff you won’t feel guilty after devouring a slice or two. We recommend to serve toasted, smeared with butter.
Ingredients:
- 1 large organic banana (mashed)
- 1 tbsp OWN coconut sugar
- 2 cups OWN almond meal
- ¼ cup OWN wholemeal spelt flour
- 2 organic eggs
- 1 tbsp OWN coconut oil
- 2 cups nut milk (we love nutty bruce)
- 1 tbsp maple syrup (we love absolute organic)
- ¼ cup OWN Pepitas
- ¼ cup OWN almonds (chopped roughly)
- ½ cup frozen blueberries
Method:
- Pre heat oven to 170 degrees and line a loaf tin
- Mash banana and whisk eggs in bowl
- Add remainder of ingredients and stir until combined
- Empty mixture into lined loaf tin and pop into the oven for 1 hour
- Leave to completely cool before slicing
