Gluten free, dairy free, vegan
Ingredients
½ cup organic cacao butter, melted
½ cup raw cacao powder
2 tbsp agave syrup
½ tsp vanilla extract
Himalayan sea salt
1 cup raw cashews, soaked overnight
2 tbsp agave syrup
¼ tsp vanilla extract
¼ cup coconut milk plus 2 tbsp extra
Method
- Melt cacao butter in a heatproof bowl over simmering water. Once melted, add cacao powder, agave, vanilla and salt, stirring until combined.
- For the filling, blend cashews, agave, vanilla and coconut milk in a food processor until smooth and creamy.
- Pour a thin layer of melted chocolate into moulds (you can use any mould you like here), then add 1-2 teaspoons of cashew filling, and top with another layer of chocolate.
- Freeze moulds for at least 2 hours, then enjoy!
