Delicious Coconut Quinoa Porridge thanks to Ashleigh Jensen!
- 1/2 cup Organic Quinoa, rinsed
- 1 cup coconut milk
- 2 TBS Chia Seeds
- Optional extras: Coconut yogurt, cinnamon, coconut sugar, almonds, fresh berries, and banana.
- Add quinoa to a saucepan with ½ cup coconut milk and ½ cup water. Bring to the boil then simmer on a medium heat until liquid had absorbed from the quinoa.
- Remove from the heat and add remaining coconut milk and chia seeds. Stir well and allow to sit for 3 minutes.
- Place the quinoa into a bowl and top with your favourite fruit, nuts or coconut yogurt.
