Chunky Monkey Granola is the kind of recipe that makes your whole kitchen smell incredible and your mornings feel like a treat. Inspired by the classic banana and chocolate flavour combination, this wholefood granola is packed with rolled oats, almonds, pecans, cacao powder and naturally sweet dried banana, all bound together with a rich almond butter and honey wet mix. It is gloriously crunchy, deeply satisfying and completely free from anything artificial. Whether you pile it over coconut yoghurt, splash it with your favourite plant milk or eat it straight from the jar by the handful, this is one batch bake you will want on rotation all year round. Make it on the weekend and breakfast is sorted for the whole week.

Ingredients
- 250g rolled oats
- 80g almonds, roughly chopped
- 60g pecans, roughly chopped
- 2 tbsp chia seeds
- 2 tbsp cacao powder
- 1–2 tsp cinnamon
- 3 tbsp cacao nibs
- 80g dried banana, chopped
- 60g banana chips
Wet mix:
- 1/3 cup almond butter
- 1/3 cup honey
- 1/4 cup coconut oil
- Pinch of salt

Method
1. Preheat oven to 180°C (fan forced) and line a baking tray with baking paper.
2. In a large mixing bowl, add oats, almonds, pecans, chia seeds, cacao powder, cinnamon, and salt. Mix well.
3. In a small saucepan or microwave-safe bowl, gently melt together almond butter, honey, and coconut oil until smooth and runny.
4. Pour the wet mixture into the dry ingredients and mix thoroughly until everything is evenly coated and sticky.
5. Spread mixture evenly onto the prepared tray and press down firmly (this helps create clusters).
6. Bake for 25–35 minutes, stirring once halfway if you prefer looser granola, or leaving it untouched for bigger clusters.
7. Remove from the oven and allow to cool completely on the tray (this is key for crunch).
8. Once cool, mix through cacao nibs, dried banana, and banana chips. Store in an air-tight container.
