Entertaining made easy… and healthy! PERFECT EARTH PASTA range is a healthy, gluten-free alternative to conventional pasta. Low-glycemic index foods with high fibre content such as this pasta help prevent high blood sugar and promote healthy digestion, so you and your guests can eat guilt-free!
Ingredients:
PASTA –
- 1 packet PERFECT EARTH BROWN RICE PASTA
- 2 cans organic diced tomatoes
- 1 cup fresh organic basil
- 1 organic brown onion (diced)
- 1 organic chilli
- 1 tbsp oregano
- 2 tbsp organic olive oil
- 2 tbsp garlic (crushed)
- salt & pepper to taste
- ½ cup fresh Bocconcini
GARLIC TRIANGLES –
- Pure harvest spelt wrap
- 2 tbsp organic butter
- 1 tsp organic olive oil
- 1 tbsp organic garlic (crushed)
- salt & pepper to taste
- 3 tbsp granda Padano (can substitute parmesan)
Method:
PASTA –
- Bring a large pot to boil and cook pasta as per instructions on the packet. Remove once cooked, drain and set aside.
- In a large saucepan saute olive oil, garlic & brown onion. Once onions become translucent add canned tomatoes, chilli, oregano & salt, pepper.
- Bring sauce to boil and then reduce to simmer for about 10 mins
- Add the majority of the fresh basil (leave a few leaves to garnish on top)
- Add cooked pasta & stir until all the pasta is coated in the sauce,
- Serve in a large bowl & top with fresh basil and bocconcini
GARLIC TRIANGLES –
- Preheat oven to 180 degrees
- Combine butter, olive oil, garlic, salt & pepper in a small bowl and spread onto the wrap. Top with parmesan
- Place in oven and cook for about 10 mins or until crunchy & golden
- Remove and cut into small triangles
