Dried figs are a source of insoluble and soluble fibre which is great for healthy digestion and keeping you full for longer. Figs also contain calcium which is important for bone health. They make a fantastic addition to sweet and savoury dishes.
Ingredients:
6 baby dried figs, cut in halves
200g rocket or baby spinach
4 tbsp chopped roasted walnuts
30g goat’s cheese
3 tbsp chopped flat leaf parsley
2 tbsp chopped fresh mint
4 tbsp balsamic vinegar
4 tbsp Olive oil
Method:
- Place rocket in a bowl. Top with chopped walnuts, goats cheese, parsley, mint and baby figs.
- Add olive oil and balsamic vinegar to a jar and shake thoroughly.
- Dress salad and serve immediately
