This mousse is seriously so quick and fuss free. Plus it’s vegan, gluten free and nut free to boot! You’ll only need a few ingredients and ten minutes to prepare.
250g silken tofu
¼ cup rice malt syrup, coconut nectar or liquid sweetener of your choice
2 tsp vanilla essence
5 medjool dates
1 very ripe avocado, seed and skin removed
200g dairy free dark chocolate (available from our bulk bins in store)
Optional: We made our mousse Jaffa Flavour! Grate the zest of an orange (very finely with a microplane if possible) through the mixture before blending if this flavour is up your alley too. Make sure you process the combined mixutre very finely to get a silky smooth mousse texture.
Place silken tofu, rice malt syrup, vanilla essence, dates and avocado into a high speed blender and combine for one minute or until smooth.
Melt the dark chocolate and swirl through the mixture already inside the blender. Blend together for one to two minutes, or until silky smooth. Refrigerate overnight or until mixture has thickened to a mousse texture.
We served ours with a few slices of orange, dates and some melted dark chocolate.
